Isn’t this Yellow Green Courgettes Tart a ray of sunshine?
Now that courgettes are in season, we are enjoying some of our old favourites – a simple quiche filled with yellow and green courgettes, basil and a touch of cheddar. Bon appétit!
Yellow Green Courgettes Tart
Ingredients
- 1 roll Paneton savoury pastry
- 2 courgettes – green and yellow grated
- 100 g cheddar grated
- 3 eggs
- 1 cup milk or cream
- 1/4 cup basil or mint or parsley or chives chopped
- 1 clove garlic grated
Instructions
- Butter a quiche pan or place baking paper and line with pastry
- Chill in the fridge or 20 minutes
- Preheat the oven to 180°C
- Place baking weights and bake for 15 minutes
- In a mixing bowl, beat eggs, milk, salt and pepper until combined
- Add the remaining ingredients and mix well
- Pour filling into the pastry base and bake for approximately 30 minutes
