Pork & Fennel Sausage Rolls

Ingredients

  • 2 sheets Paneton Flaky Puff Pastry
  • 1 pack Pork & fennel sausages
  • 1/2 apple finely diced
  • 1 carrot finely diced or grated
  • 1 onion finely diced
  • 1 tsp fennel seeds
  • salt & pepper to taste

Instructions

  • Remove two sheets of pastry form the pack and allow to defrost.
  • Preheat oven to 200'.
  • Line one baking tray with baking paper.
  • Remove the sausages from the casings and put filling into a large bowl, add all other ingredients and mix well.
  • Cut pastry in half.
  • Divide sausage filling by four, and shape into a long log to fit down the centre of your pastry.
  • Fold the pastry over the filling, folded edges down.
  • Cut sausage rolls into the size you prefer.
  • Brush pastry with egg wash.
  • Bake at 200' for 10 minutes, then reduce heat to 180' and bake for a further 15-20 minutes until pastry is golden brown and filling is cooked.

Ingredients

  • 1 Roll Paneton Flaky Pastry
  • This Braided Pastry Log was made using leftovers from a roast dinner. It's a really economical way to use up any food to prevent food wastage. In this recipe we used leftover roast chicken and vegetables bound together by a small amount of béchamel sauce. Add extra herbs or spices to boost the flavour.

Instructions

  • Preheat oven 200'. Line baking tray with baking paper.
  • Prepare pastry by slicing the sides into strips for braiding. the pastry will be lengthwise and approximately in thirds.
  • Chop all leftovers into bite sized pieces and put into a large bowl. Stir through béchamel and seasoning and mix well.
  • Spoon filling mix into the middle section of pastry and then start to braid pastry, encasing the filling. Once finished, brush with egg wash and bake for 40 minutes until pastry is golden and cooked through.

Ingredients

  • 1 Roll Paneton Flaky Pastry
  • 2 Potatoes
  • 2 cups Spinach or silverbeet
  • 100 g Feta
  • 2 Eggs
  • 1/4 cup Milk
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 200'.
  • Peel and slice potatoes and boil until tender. Allow to cool while preparing the rest.
  • Grease pie tin with butter and line with pastry bottom
  • Finely chop spinach and add to a large bowl with crumbled feta.
  • Add eggs and milk and mix well.
  • Pour into the pastry bottom and top with pastry lid.
  • Bake until golden and pastry cooked.

Carrot, Feta and Caramelised Onion Tarte Tatin

Ingredients

  • 1 Roll Paneton Flaky Pastry
  • 8 Carrots Peeled and cut in half.
  • 1/2 cup Caramelised onion jam
  • 100 g feta
  • Fresh thyme to finish

Instructions

  • Preheat oven to 200".
  • Cut pastry into a disk to fit oven proof fry pan.
  • Par boil carrots until tender. Dry off well.
  • Place carrots cut side down in a pan a fry with butter to caramelise. Then spoon onion jam over the top and pastry, tucking the edges in and under.
  • Bake in oven until pastry is golden and puffed up.
  • Once cooked and ready to turn out, place a large plate over pan and flip over. Top with crumbled feta and thyme leaves. A drizzle of honey is nice too.

  • 1 Roll Paneton Flaky Pastry
  • 6 Potatoes, thinly sliced
  • Salt and Pepper to season
  • 1 tsp Thyme

Instructions

  • Preheat oven 200".
  • Line tray with baking paper. Unroll pastry and score a 2cm edge to make a boarder.
  • Decorate pastry with potato slices, keeping the boarders free to puff up.
  • Season with S&P and thyme.
  • Bake until pastry is golden and potatoes are cooked.

Indian spiced cauliflower pies

Ingredients

  • 1 Roll Paneton flaky pastry (use Pastry&Co for a vegan option)
  • 1/4 cauliflower finely cut
  • 1 small potato finely diced
  • 1/2 celery stick finely diced
  • 1/2 carrot finely diced
  • 1 onion finely diced
  • 1/4 cup black lentils (put works well too)
  • 2 garlic cloves finely diced
  • 1 tsp tumeric powder
  • 1 Tbs grated ginger
  • 1 tsp mustard seeds
  • 1 tsp cumin powder
  • 1 egg (for washing pastry)
  • sesame seeds (for sprinkling on pis lid)

Instructions

  • Preheat oven to 200'
  • Boil a small pot of salted water, add lentils and cook till tender. drain and set aside.
  • Finely dice onion, carrots and celery and sauté till softened. Add diced potato, cauliflower, garlic, ginger, spices and cook until tender (add a little water if needed to soften veggies)
  • Add lentils to cauliflower mix, season to taste with salt and pepper. Set aside and cool.
  • Cut flaky pastry into four top and bottom disks using the tin as a guide.
  • Fill with cooled mix, crimping edges to secure filling.
  • Brush with egg mix and sprinkle sesame seeds over the top and bake in the oven until golden – approx 30 minutes.

Delicious served with a yoghurt coriander sauce and a green salad.

    Paneton Tex-Mex sausage rolls

    Cook Time 40 minutes

    Ingredients

    • 1 Paneton Flaky Pastry
    • 1 pack good quality beef sausages
    • 1 tin black beans drained
    • 1 carrot grated
    • 1 tsp paprika
    • 1 tsp cumin powder
    • 1 tsp salt
    • 100 g tasty cheese
    • 1 egg for egg wash

    Instructions

    • Preheat the oven to 185'.  Line a baking tray with baking paper.
    • In a large mixing bowl – squeeze sausage filling, grated carrot, spices and black beans, then mix together using your hands until well combined.
    • Cut pastry into two, then put filling down the middle of each piece.  
    • Push in the cubes of cheese along what will be the bottom of the roll. 
    • Fold over one side of pastry, wash-egg along the second and then fold that over to cover the filling.
    • Place on baking tray – fold side down then wash with egg mix and sprinkle with sesame seeds.
    • Bake for 30 minutes or until the pastry is cooked and golden.

    • 4 Golden Queen Peaches
    • 3 tbsp almonds sliced
    • 2 tbsp sugar

    Instructions

    • Preheat oven to 200°C
    • Line a baking tray with baking paper (we used a cake pan to hold it in shape while cooking this time)
    • Cut Flaky pastry to size – we used a dinner plate and cut around for the shape
    • Slice fruit up and arrange onto the pastry disk
    • Sprinkle with a little sugar and almonds
    • Bake for 10 minutes at 200°C then reduce to 170°C and cook until golden and pastry is cooked through
    • Serve with a dollop of cream or ice cream

    • 1 roll Paneton Flaky Pastry cut into 8 rectangles
    • 12 figs 1 1/2 per tart
    • 8 tbsp marmelade
    • 100 g blue cheese
    • 24 walnut halves
    • fennel flowers if unavailable use thyme

    Instructions

    • Preheat your oven to 200°C
    • Line a baking tray with non-stick baking paper
    • Cut your flaky pastry into 8 rectangle portions
    • With your knife, gently score a 1cm line around the edge to allow a border to rise
    • Smear a tablespoon of marmelade on the base of each pastry
    • Place figs and walnuts on top
    • Bake for 10 minutes at 200°C and then reduce temperature to 170°C until pastry has cooked through and golden brown
    • Right before serving add the blue cheese and fennel flowers

    Sausage Rolls are as old as the Ancient Greek and the Roman Empire. However the modern recipe is subject to a typical discussion: who invented the sausage roll? After a funny attempt by the USA to claim the paternity for it, most of the observers have settled to declare UK the mother patrie of the pastry. However again, some say sausage rolls have been conceived in France in the 19th century…

    So here is our recipe for some delicious rolls, with Paneton flaky pastry of course, the best of NZ and France combined.

    Sausage Rolls

    Course Appetizer

    Ingredients

    • 1 roll Paneton flaky pastry
    • 400 g pork mince
    • 1 Pink Lady apple diced
    • 1 onion finely sliced
    • 1/2 cup bread crumbs
    • 1 tbsp fennel seeds toasted and ground
    • salt and pepper
    • 1 egg to wash pastry

    Instructions

    • Preheat the oven to 180°C
    • Lightly sauté onion til softened and set aside to cool
    • In a large bowl, add all filling ingredients and mix well using your hands to squeeze the mixture together
    • Cut pastry in half on the long side
    • Place filling evenly onto the middle of the pastry and fold on side over, then brush the egg mix over the other edge and fold over to cover the filling
    • Cut into even size sausage rolls, and run a knife along the top of each roll – slicing two diagonal cuts
    • Brush with egg mix and bake for 40 minutes until meat and pastry are cooked through and golden brown
