Pear and chocolate tart

Ingredients
  

Frangipane Recipe:
  • 90 g butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup almond meal
  • 1 tsp vanilla bean extract
  • 1 tsp ginger powder
  • 1 tsp cinnamon powder
  • 1 Tbsp cocoa
  • 1 Paneton sweet pastry
  • 3 pears

Method
 

  1. Preheat oven to 200 °C
  2. Butter baking tin with butter and line the tin with pastry
  3. Rest the tin in fridge while preparing the frangipane
  4. Cream butter and sugar until light and fluffy
  5. Beat one egg at a time until combined
  6. Add almond meal, vanilla bean, cinnamon and cocoa powder - combine well
  7. Spoon frangipane mixture into the tart base
  8. Thinly slice pears and place on top of the frangipane mixture
  9. Place in oven for 40 minutes until golden brown
  10. Drop temperature to 180 °C after 10 minutes of cooking
