Spinach, Feta and Lemon Quiche

Ingredients

  • 2 Sheets Paneton Savoury Pastry Sheets
  • 6 Eggs
  • 100 g Feta crumbled
  • 2 cups Spinach finely shredded
  • 1 Lemon zested
  • 1 tsp Zaatar
  • 1/2 cup Cream

Instructions

  • Preheat oven to 180 degrees. Grease deep dish pastry tin with butter and then line with pastry. Chill in the fridge for 30 minutes.
  • Finely shred spinach, crumble feta, and add to a bowl with eggs, lemon zest, zaatar and cream. Mix well.
  • Blind bake pastry for 10 minutes.
  • Pour in filling and bake for 30-45 minutes until just set and golden on the top.

Asparagus and courgette tart

Cook Time 40 minutes

Ingredients

  • 1 roll Paneton savoury pastry defrosted
  • 1 bunch asparagus chopped
  • 1 courgette shaved using a peeler
  • 4 eggs
  • 1/2 cup cream or milk
  • 1/4 cup fresh herbs – chives and parsley finely chopped
  • 1 tsp salt and pepper to taste

Instructions

  • Pre-heat oven to 180'.
  • Grease and line your baking tin with baking paper- we used a shallow rectangle, it's easy to portion, but any will work
  • Line with pastry, trimming the edges and saving the excess to decorate the top.
  • Put a layer of baking paper on the pastry and fill with baking beans to blind bake – nobody wants a soggy bottom. Approximately 15 minutes.
  • In a large bowl, mix the egg, herbs and cream well.
  • Add veggies to the pastry and pour over the egg mix.
  • Decorate the top with the leftover pastry – we did a cute lattice top, have fun with it.
  • Bake for around 30 minutes, or until egg has just set.

Coronation Quiche

A delicious quiche made with savoury pastry and filled with spinach, broad beans and cheddar.
Course Lunch, Main Course

Cook Time 45 minutes

Ingredients

  • 1 roll Paneton Savoury Pastry
  • 125 mls Milk
  • 175 mls Cream
  • 2 Eggs
  • 1 Tbs Chopped Tarragon use chives or parsley if tarragon unavailable
  • 100 g Cheddar
  • 180 g Spinach cooked with excess water squeezed out
  • 60 g Broad beans (double podded) use soya beans or peas if broad beans unavailable

salt and pepper to taste

Instructions

  • Pre-heat oven to 170'.
  • Grease your quiche tin with butter.
  • Unroll Paneton savoury pastry and use a rolling pin the roll out a little thinner (approx 3mm)
  • Gently take pastry and line tin, pressing in to remove air bubbles around edges and bottom. Trim edges by trimming with a knife.
  • Prick the base with a fork a few times before winning with baking paper and baking beads.
  • Bake for 10 minutes, then remove baking beads and paper and bake for a further 5 minutes.
  • In a large bowl mix eggs, milk, cream and herbs and season to taste.
  • Sprinkle half the cheddar cheese over the base. Spread out cooked and dried spinach. Add beans then pour over egg mix and ensure that filling is evenly distributed. Top with remaining cheddar.
  • Bake until just set and lightly golden on top.

Enjoy your brekky with this old fashioned cooked breakfast galette. Did you know that in Italy, the term crostata for galette appeared in cookbooks for the first time in the 1400s, during the Renaissance? In France, the word galette comes from the Old French word galet, which means pebble. 

Nowadays, the Breton galette is a crepe fashioned from buckwheat. The sides are folded over the filling, which gives it its infamous rustic look. It is very similar to the tart-like version we are talking about here: the old fashioned cooked breakfast galette!

Old Fashioned Cooked Breakfast Galette

Ingredients

  • 1 roll Paneton savoury pastry
  • 1 handful fresh parsley chopped
  • 100 g ham chopped
  • 4 tbsp baked beans
  • 2 eggs
  • 1/2 cup milk
  • 3 eggs to crack directly onto the top
  • salt and pepper

Instructions

  • Preheat the oven to 180°C
  • Line baking tray with baking paper and the pastry
  • Place a sheet of baking paper in top of the inside and weigh down with a baking tray
  • Bake for 15 minutes
  • In a bowl, mis 2 eggs and 1/2 cup of milk and add parsley
  • Pour onto the pastry, crack 3 eggs on top and sprinkle with ham
  • Bake until pastry is golden brown and eggs are baked

Asparagus Quiche

Ingredients

  • 1 roll Paneton savoury pastry
  • 1 bunch asparagus
  • 2 potatoes
  • 2 onions sliced and sautéed
  • 5 eggs
  • 500 ml cream
  • 100 g ricotta
  • 200 g mozzarella or cheddar

Instructions

  • Preheat the oven to 180°C
  • Grease a 20cm springform tin and line with pastry
  • Place it in the fridge
  • In a bowl, mix eggs and cream together and season with salt and pepper
  • Cut asparagus in half saving the tip ends to decorate the top
  • Slice the other ends into little rounds and mix in with eggs and cream mix
  • On your pastry lined tin, sprinkle a layer of cheese at the base, then the potatoes, then another layer of cheese, pour over the eggs and cream mix and finally arrange asparagus and dollop ricotta around the top
  • Bake for approximately 40 minutes

Yellow Green Courgettes Tart

Ingredients

  • 1 roll Paneton savoury pastry
  • 2 courgettes – green and yellow grated
  • 100 g cheddar grated
  • 3 eggs
  • 1 cup milk or cream
  • 1/4 cup basil or mint or parsley or chives chopped
  • 1 clove garlic grated

Instructions

  • Butter a quiche pan or place baking paper and line with pastry
  • Chill in the fridge or 20 minutes
  • Preheat the oven to 180°C
  • Place baking weights and bake for 15 minutes
  • In a mixing bowl, beat eggs, milk, salt and pepper until combined
  • Add the remaining ingredients and mix well
  • Pour filling into the pastry base and bake for approximately 30 minutes

  • 2 cups silverbeet lightly sautéed
  • 1 cup potato cubes al dente
  • 2 eggs whisked
  • 1/2 cup milk
  • 1/4 cup sunflower seeds

Instructions

  • Preheat the oven to 180°C
  • Butter a tin or use baking paper and line it with pastry
  • In a bowl, mix silverbeet with eggs
  • Pour onto the pastry
  • Sprinkle with sunflower seeds over the top
  • Bake for approximately 35 minutes until golden brown

Savoury Pastry Plaited Roll

Ingredients

  • 1 roll Paneton savoury pastry
  • 300 g beef or lamb mince
  • 1 onion
  • 1 garlic clove
  • 1 carrot
  • 1 celeri stick
  • 6 mushrooms
  • 2 cups baby spinach leaves
  • 1 handful of mint
  • 100 g feta
  • 1 egg for washing the pastry

Instructions

  • Preheat the oven to 180°C
  • Blitz all veggies in a fine texture
  • In a pan, fry the veggies until they are tender and mostly cooked
  • Allow to cool before combining with meat
  • You will need a large mixing bowl – the best way is to use your hands and squeeze the mix until they are combined
  • Line a baking tray with paper and place the pastry
  • Add meat mix down the middle
  • Press cubes of feta into the centre of the meat mix
  • Evenly slice the pastry into strips to plait
  • Brush egg wash over the pastry
  • Bake 30 to 40 minutes until golden brown
